About California Pizza Kitchen's Gluten Free Pizzas
California Pizza Kitchen is well known for its innovative signature pizzas, as well as a wide variety of other menu offerings including creative salads. Now CPK is proud to include TWO types of gluten free pizza crusts, both a "traditional" style gluten free crust, as well as a new cauliflower-based crust (made from a blend of cauliflower, mozzarella cheese, rice flour, herbs, and spices). A range of gluten-free pizzas, like The Original BBQ Chicken Pizza, Pepperoni Mushroom Sausage, Pepperoni, and Margherita are made in a separate area of the kitchen, using separate toppings, to keep them safe from cross contamination. Gluten free diners can select either type of gluten free crust (tradtional or cauliflower). Note: Pizzas with other toppings other than those listed above can be made to order on a gluten-free crust, but please know that only the ingredients used for these GF pizzas listed on their GF Menu are kept separate from toppings used on all their other pizzas. That is also the case for the range of gluten-free items marked with a gluten free symbol on their regular menu (i.e. they are not prepared in a separate area).
The team at California Pizza Kitchen spent almost a year perfecting their traditional light and crispy style gluten free crust. It's a blend of rice flour, potato starch, tapioca flour, cane sugar, and potato flour. CPK worked with the Gluten Intolerance Group (GIG) to develop the procedures for avoiding cross contamination when preparing all gluten free pizzas. As noted above, all 17 ingredients used in their four varieties of gluten-free pizza are kept in separate containers in a separate area on the line. The flour used for "dusting" ALL pizzas at CPK is rice flour instead of the traditional wheat flour. This eliminates the concern about airborne flour as pizza crusts are stretched and tossed. The gluten-free pizzas are cooked in a special tin in the oven, which provides a barrier so it doesn't come into contact with other pizzas. For the utmost in food safety, separate plates and utensils are also used for the gluten free pizzas.
